Ribs of Lamb (Mutton)
Ingredients
 | Mutton (Lamb) Ribs : Pre-cut | 1 kg |
 | Milk | 1/2 ltr |
 | Onion | 4 - medium sized |
 | Ginger | 10 gms |
 | Garlic | 5 gms |
 | Green Chillies | 5 gms |
 | Almonds | 10 gms |
 | Cinnamon Powder | 5 gms |
 | Clove Powder | 5 gms |
 | Cardamom Powder | 5 gms |
 | Cooking Medium (Fat/Oil) | 100 mls |
 | Salt | To taste |
Preparation
- Wash & clean the pre-cut ribs, add salt, keep aside.
- Peel & cut the onions.
- Grind Ginger, garlic, green chillies to paste.
- Soak almonds in hot water for 15 minutes, remove & grind to a fine paste.
Cooking
In a pressure pan, lay the pieces of ribs out, evenly coated with the pastes. Pour milk.
Cook for 20~25 minutes till the meat softens.
Heat oil in a wok. Fry onions till golden brown.
Combine the Ribs & spices, stir occasionally.
Cook on slow fire. Mix in powdered cinnamon, cloves & cardamom.
Add 1/2 cup of water, continue cooking on slow fire till a thick gravy forms
Serve with Garlic Bread/Naan
