Green Chicken
("Hariyali" to us Indians)
Ingredients
 | Chicken - Boneless | 1 kg |
 | Onion | 4 |
 | Capsicum (Bell Pepper) | 4 |
 | Ginger | 10 gms |
 | Garlic | 10 gms |
 | Fresh Mint (or Coriander) leaves | 4 sprigs |
 | Plain Yogurt | 250 gms |
 | Green Chillies | 1~2 |
 | Cooking Medium (Fat/Oil) | 50 mls |
 | Salt | To taste |
Preparation
- Cut chicken into small cubes.
- Cut the onions & 3 of the Capsicum (dice)
- Grind Ginger, garlic, mint/coriander leaves, green chillies & the remaining capsicum (bell pepper)
- Beat the yogurt lightly, mix in ground paste, salt to taste and 25 ml of the cooking medium.
- Soak chicken. Marinate for minimum 3~4 hours.
Cooking: 30 minutes
Saute the diced Onions & Capsicum in the remaining oil. Keep aside
Arrange Chicken pieces, sauted onion & capsicum on wooden skewers.
Apply the remaining marinade.
Grill in a pre-heated oven at 200 deg. for 10 minutes.
Turn skewers over & grill for another 5~7 minutes.
