Green Chicken
("Hariyali" to us Indians)


Ingredients

Chicken - Boneless1 kg
Onion4
Capsicum (Bell Pepper)4
Ginger10 gms
Garlic10 gms
Fresh Mint (or Coriander) leaves4 sprigs
Plain Yogurt250 gms
Green Chillies1~2
Cooking Medium (Fat/Oil)50 mls
SaltTo taste

Preparation
  1. Cut chicken into small cubes.
  2. Cut the onions & 3 of the Capsicum (dice)
  3. Grind Ginger, garlic, mint/coriander leaves, green chillies & the remaining capsicum (bell pepper)
  4. Beat the yogurt lightly, mix in ground paste, salt to taste and 25 ml of the cooking medium.
  5. Soak chicken. Marinate for minimum 3~4 hours.

Cooking: 30 minutes

Saute the diced Onions & Capsicum in the remaining oil. Keep aside
Arrange Chicken pieces, sauted onion & capsicum on wooden skewers.
Apply the remaining marinade.
Grill in a pre-heated oven at 200 deg. for 10 minutes.

Turn skewers over & grill for another 5~7 minutes.
