Preparation: 10 minutes
Cooking: 30 minutes Heat 30 ml of the oil in a wok and saute the chopped garlic & onion till onions are translucent. Place the cauliflower with the stalk end up on medium heat, fry till golden brown. Turn over & repeat till stalk end is brown. Remove from wok and set aside. Pour the remaining oil and add the pastes, tomato puree, chopped tomatoes, cardamom etc and salt to taste (a bit of sugar - if you wish). Stir fry till brown. Pour 2 cups of water & bring to boil. Place the fried Cauliflower face down, cover the wok and allow to cook on low heat. Turn the cauliflower over a few times so the 'gravy' penetrates thoroughly. Remove wok from heat when gravy thickens. Remove cauliflower to an oven-proof casserole. Pour white sauce over and sprinkle grated cheese evenly. Bake for 15 minutes till golden brown. Garnish with Boiled Green Peas-in-Tomato Ketchup & French Fries. |
