Baked 'Masala' Cauliflower


Ingredients

   FOR THE BASE
Cauliflower - 1 whole500 gms, with a short stalk
Chopped Onion1
Chopped Garlic4~5 pods
Onion Paste3 teaspoons
Garlic Paste1 teaspoon
Ginger Paste2 teaspoons
Chilli PowderTo taste
Cardamom - crushed3~4
Cloves - crushed3~4
Cinnamon - crushed4 cms
Tomato1 medium size
SaltTo taste
Cooking Medium (Refined Oil)60 mls

   FOR THE WHITE SAUCE
Milk150 mls
Flour15 gms
Butter20 gms
Cheese Cubes2

   FOR THE GARNISH
Boiled Potatoes for French FriesAs desired
Green Peas - Boiled100 gms
Tomato Ketchup4 teaspoons

Preparation: 10 minutes
  1. Soak the Cauliflower in Salt Water for 2~3 minutes
  2. Chop the Onion, Garlic & Tomato
  3. Shred Cheese cubes
  4. Prepare the White Topping
    • Melt Butter in a small Wok, add the flour and stir fry for 1 minute. Pour Milk & add Salt to taste. Stir continuously till the sauce thickens. Remove from heat & keep aside

Cooking: 30 minutes

Heat 30 ml of the oil in a wok and saute the chopped garlic & onion till onions are translucent. Place the cauliflower with the stalk end up on medium heat, fry till golden brown. Turn over & repeat till stalk end is brown. Remove from wok and set aside.

Pour the remaining oil and add the pastes, tomato puree, chopped tomatoes, cardamom etc and salt to taste (a bit of sugar - if you wish). Stir fry till brown. Pour 2 cups of water & bring to boil. Place the fried Cauliflower face down, cover the wok and allow to cook on low heat. Turn the cauliflower over a few times so the 'gravy' penetrates thoroughly. Remove wok from heat when gravy thickens.

Remove cauliflower to an oven-proof casserole. Pour white sauce over and sprinkle grated cheese evenly. Bake for 15 minutes till golden brown.

Garnish with Boiled Green Peas-in-Tomato Ketchup & French Fries.
